Pork roast was on the table on special occasions, on Sundays, more often on big calendar holidays (All Saints Day, Christmas, New Year …), celebrations (weddings), funerals and so on … The unwritten rule says: you need to eat pork for the New Year, as the pig roars forward while the hens claws dig backwards.
The pig has always been processed and used entirety, nothing being discarded. It is a symbol of abundance, wealth, happiness and contentment. The patron saint of pigs and breeders is St. Anthony the Hermit, celebrated on January 17th.
