Ingredients for dough

  • 500 g flour (50/50 soft and hard wheat mixture)
  • 0.5 dl oil
  • 1.5 dl milk
  • 1 dl water
  • 1 teaspoon of salt
  • 0.5 cube of yeast
  • 0.5 teaspoon of sugar

Ingredients for the filling

  • 40 g grease or oil
  • 1 bunch of green onions
  • 1 bouquet of chives
  • 1 bouquet mint
  • salt, pepper

Zelševka is a sweet or salty potica made from leavened dough and a special filling made from onions and herbs.

Prepare yeast starter with warm water, yeast, sugar and a tablespoon of flour.

Leave it warm to rise. Sift flour and salt it. Mix the rising yeast, warm milk with oil. Knead until the dough is smooth and elastic. Let the dough rise in a warm location. When the dough is doubled in size, roll the dough on a floured board, spread whipped egg whites on the roll dough and sprinkle with the filling. Roll and place in a greased baking pan. Bake for 45 minutes at 160 to 170 ° C.

To prepare the filling, we cut the herbs, fry them in oil, add salt and pepper, leave it to cool down.

Želševka is a spring-summer potica stuffed with chives. It is typical for the Rovtar, Idrija and Cerklje gastronomic regions (Slo). Its name comes from the dialect word “želš”, which means chives. It is prepared sweet, with the addition of raisins or salty. Salted želševka can be eaten with stewed sauerkraut or jota.
