Ingredients for dough

  • 250 g soft flour
  • 1 dl lukewarm water
  • salt
  • 20 g oil
  • 1 egg

Ingredients for filling

  • 50 g butter
  • 2 eggs
  • 700 g cottage cheese
  • 1 dl sour cream
  • 20 g breadcrumbs or wheat groats
  • salt

Ingredients for soup

  • 2.5 l vegetable s tock
  • 2 dl sour cream
  • 30 g flour
  • salt, nutmeg
  • chives or parsley

COTTAGE CHEESE ”ŠTRUKELJCI” (DUMPLINGS) IN SOUP

Dumplings with cottage cheese are prepared from a dough with filling and cooked. We can prepare them throughout all year.

Sift the flour, make a well in the middle, pour oil and egg into it, and add salt. Add the lukewarm water and mix the ingredients. Knead the dough until it is smooth and elastic and does not stick to the hands and pot. From the dough make a loaf, coat it with oil and let it rest for at least 30 minutes. Cover with transparent foil or a napkin

Roll out the dough on a floured tablecloth, coat with oil, and stretch thinly. Cut the ticker edges and coat with filling. Roll thin ”dumplings” (about 3 cm in diameter). Press with finger at a distance of 3 cm and cut.

For filling foamy stir the butter and add the yolks. Add the beaten cottage cheese, sour cream, salt and breadcrumbs. Lightly stir the egg white into the mixture.

Boil the soup stock, season it, mix the sour cream and flour separately and pour it into the soup to thicken it. Boil well and stir the ”dumplings” into the soup. Sprinkle chopped chives or chopped parsley before serving.

Dumplings (in Slovene language “štrukelj” is taken form Austrian German word “Struckel”) is one of the most typical Slovene festive dishes. The dish is known for its snail-shaped rolls. Many dumpling varieties are prepared in all Slovenia gastronomic regions. They differ in fillings, sweet and savoury. Most popular dumpling varieties are made with cottage cheese filling, mostly wrapped in hand-pulled dough. They can be either boiled wrapped in a cloth or baked. They are also delicious in a soup. They are excellent as a standalone dish or side dish. Most famous Slovene dumplings are filled with tarragon filling.
