Marinating or “šavor” is a special way of preparing fish, typical for Slovenian and Croatian Istria. The most suitable for this process are smaller fish. The main ingredients for “šavor” are blue fish (anchovies or sardines), olive oil, vinegar, onion and salt. In “šavor” can be added also ingredients like white wine, lemon juice, pepper, garlic, rosemary, parsley and bay leaf.
