VRSAR HAZELNUT AMARETTI

In the area of Vrsar there used to be abundant hazelnut plantations, so the people of Vrsar started preparing Vrsar hazelnuts amaretti.

Manually grind the hazelnuts. Mix the eggs with sugar and then slowly stir in the ground hazelnuts. Place a sheet of baking paper on the baking tray, and shape small balls from the mixture. Bake the balls for about 15–20 minutes at 180°C. * The secret of good hazelnut amaretti is in grinding hazelnuts on a hand mill.

She was born in Vrsar and in her free time she always loved to cook and prepare desserts. She received the traditional recipe for amaretti 27 years ago from an acquaintance at her wedding party, and she adapted it herself by including vanilla sugar in the recipe. This recipe eventually became the most widespread recipe in Vrsar for amaretti from Vrsar. Their specialty is in the basic ingredient - hazelnut, unlike the classic amaretti, which are prepared from almonds.
